The Au Jus Collection takes its name from the juice-catching groove routed around the board's perimeter. When you're carving a roast, slicing a brisket, or breaking down poultry, liquids run to the channel instead of pooling under the knife or running onto the counter. Flip the board over and the flat reverse side handles everyday prep: vegetables, bread, cheese, and anything else that doesn't need containment. One board covers both jobs without a swap.
John Boos builds this board from hard northern maple, a tight-grained hardwood that resists scoring and surface damage under repeated knife contact. At 1-1/2 inches thick, the board carries enough mass to sit flat and steady on the counter without a damp cloth underneath, and the extra material means there is depth to resurface the board as the surface wears over time.
